Foreword
This standard was drafted in accordance with the rules given in GB/T 1.1-2009.
This standard replaces GB/T 5513-2008 "Measurement of reducing sugars and non-reducing sugars in grain and oil."
The main technical changes of this standard compared with GB/T 5513-2008 are as follows.
--- Added normative reference document GB/T 5490 (see Chapter 2);
--- Increased the specifications of the Feilin reagent method (see 5.3.5);
--- Modified the volume of the volume of the Ferien reagent method (see 5.3.1, 12.9 of the.2008 version);
--- Revised the sample quality of the Feilin reagent method (see 5.4.2, 13.2 of the.2008 edition);
--- Modified the Feilin reagent method for non-reducing sugar calculation formula (see 5.5.2,.2008 edition of 14.2).
This standard was proposed by the National Grain and Material Reserve Bureau.
This standard is under the jurisdiction of the National Grain and Oil Standardization Technical Committee (SAC/TC270).
This standard was drafted. China Grain Storage Chengdu Storage Research Institute Co., Ltd.
The main drafters of this standard. Jiang Tao, Yang Chao, Chen Jinying, Fu Aihua, Feng Yongjian.
The previous versions of the standards replaced by this standard are.

Determination of reducing and non-reducing sugars in grain by grain and oil
1 Scope
This standard specifies the terms and definitions for the determination of reducing sugars and non-reducing sugars in food, as well as the methods of potassium ferricyanide and Ferien reagents.
The principles, reagents, instruments and utensils, procedure, calculation of results and repeatability of reducing sugars and non-reducing sugars were determined.
This standard is applicable to the determination of reducing sugar and non-reducing sugar content in commercial grain. The potassium ferricyanide method is mainly suitable for wheat flour reduction.
Determination of sugars and non-reducing sugars.
2 Normative references
The following documents are indispensable for the application of this document. For dated references, only dated versions apply to this article.
Pieces. For undated references, the latest edition (including all amendments) applies to this document.

3 Terms and definitions
The following terms and definitions apply to this document.
3.1
Reducing sugar reducedsugar
A sugar having a free hemiacetal hydroxyl group or a hemi-ketal hydroxyl group in its molecular structure.
3.2
Non-reducing sugar non-reducedsugar
A sugar which does not contain a free hemiacetal hydroxyl group or a hemi-ketal hydroxyl group in the molecular structure.
4 potassium ferricyanide method
4.1 Principle
The reducing sugar reduces potassium ferricyanide to potassium ferrocyanide in an alkaline solution and is itself oxidized to the corresponding sugar acid. Excess potassium ferricyanide
In the presence of acetic acid, iodine is precipitated by the action of potassium iodide, and the precipitated iodine is titrated with a sodium thiosulfate standard solution. By calculating redox sugar
The amount of potassium ferricyanide used is checked to show the percentage of reducing sugar in the sample.
4.2 Reagents
Unless otherwise stated, this standard uses only reagents that are confirmed to be analytically pure.
4.2.1 Water. Meet the requirements of Class III water in GB/T 6682.
4.2.2 95% ethanol.
4.2.3 Acetate buffer. Dissolve 3.0 mL of glacial acetic acid, 6.8 g of anhydrous sodium acetate and 4.5 mL of concentrated sulfuric acid, then dilute with water until
Mix 1000 mL and mix.
