National food safety standard - Limit of pathogen in
prepackaged foods
1 Scope
This Standard specifies the indicators of pathogen in prepackaged foods and
their limit requirements and inspection methods.
This Standard applies to prepackaged foods in the categories in Table 1, and
does not apply to foods, packaged drinking water, and drinking natural mineral
water that are subject to commercial aseptic requirements.
2 Principles of application
2.1 Regardless of whether the limit of pathogen is specified or not, food
producers, processors, and operators shall take control measures to reduce the
level of pathogen in food and the possibility of causing risks as much as
possible.
2.2 The collection and processing of samples shall be implemented in
accordance with GB 4789.1.
2.3 The sampling plan and inspection method shall be implemented in
accordance with Table 1. n is the number of samples that shall be collected for
the same batch of products; c is the maximum allowable number of samples
that exceed the value of m; m is the acceptable-level limit value (three-level
sampling plan) or the highest safety limit value (two-level sampling plan) of
pathogen indicators; M is the highest safety limit value of pathogen indicators.
2.4 Appendix A is used to define the food categories to which the limit of
pathogen is applicable.
3 Indicator requirements
See Table 1 for the limit of pathogen in prepackaged foods.
