3 Terms and definitions
The following terms and definitions apply to this standard.
3.1
The food frozen according to the process requirements is sublimed by ice crystals under vacuum and dried to a food drying device having a moisture content of less than 5%.
3.2
The sum of the effective material area of the equipment.
3.3
The maximum mass of water that can be removed by pure ice for the effective dry area per square meter per unit time.
3.4
The maximum mass of water that can be removed in a dry cycle with pure ice as the target area per square meter of effective dry area.
3.5
Under the normal operating conditions of the equipment, after each non-conforming product that has not reached the drying requirements and over-burning is removed from each freeze-dried product, the qualified quality is obtained.
