This standard is prepared in accordance with GB/T 1.1-2009 given rules.
This standard replaces GB/T 17320-1998 "special wheat quality."
This standard compared with GB/T 17320-1998, the main changes are as follows.
--- Modify the classification of wheat, an increase in wheat gluten;
--- Modified quality metrics, increased stiffness index requirements;
--- Increased requirements for wheat quality evaluation reports;
--- Modified laboratory bread making and evaluation methods, increase the production of noodles and laboratory evaluation.
This standard is proposed and managed by the People's Republic of China Ministry of Agriculture.
This standard was drafted. Institute of Heilongjiang Academy of quality and safety of agricultural products, the Ministry of Agriculture Grain Products Quality Supervision, Inspection and Testing

3 Qualities
According wheat grain use is divided into four categories.
a) Wheat gluten. a hard endosperm, and strong gluten wheat flour for making bread or used with wheat;
b) in wheat gluten. a hard endosperm, wheat flour gluten strong force, for the production of instant noodles, dumplings, steamed bread, noodles and other food;
c) in wheat gluten. a hard endosperm, moderate gluten strength wheat flour for making noodles, dumplings, bread and other foods;
d) gluten wheat. soft endosperm, weak gluten wheat flour for making bread, cakes, biscuits and other food.
