Foreword
This Standard replaces GB/T 7416-2000, Malting barley.
Compared with GB/T 7416-2000, the main changes of this Standard are as follows.
-- In terms and definitions, add the definition of malting barley, remove the
description of water sensitivity, and appropriately modify the description of other
definitions such as 2-row and multi-row barley;
-- Change the item “sensory” to “appearance” in Table 1, and remain its description
unchanged;
-- Split the original Table 2 into two tables, and list the physical and chemical
indicators of 2-row barley and multi-row barley in the two tables respectively;
-- Increase the indicator of thousand kernels weight of 2-row barley and multi-row
barley by 1 percentage point each for guaranteed and grade-I barley, and remain
that for the grade-II barley unchanged;
-- Adjust the indicator of protein of 2-row barley and multi-row barley respectively;
-- Change the grain selection test to plump and thin grains; increase the indicator of
full grain of 2-row barley, and multi-row barley for guaranteed and grade-I barley
by 3 ~ 4 percentage points each, and remain the that for grade-II barley unchanged;
add the requirements for thin grains;
-- Cancel the indicator of “water sensitivity”, but put its determination method into
Appendix A;
-- For the two methods of measuring the 3-day and 5-day germination rate, use the
plate method as method I, and change the funnel method to method II;
-- In the judgment rules, in addition to the 5-day germination rate, add water content
as a main indicator;
-- List the analysis methods of some indicators that the production enterprises need
to control by themselves to Appendix A for the reference of enterprises;
-- Merge the original Appendix A and Appendix B.

Malting barley
1 Scope
This Standard specifies the terms and definitions, product classification, requirements,
analysis methods, inspection rules, marking, packaging, transportation and storage of
malting barley.
This Standard applies to the acquisition, inspection and sale of barley specially used for
beer brewing.
2 Normative references
The terms in the following documents become the terms of this Standard by reference
to this Standard. For dated references, all subsequent amendments (not including errata
content) or revisions do not apply to this standard. However, parties to agreements that
are based on this Standard are encouraged to study whether the latest versions of these
documents can be used. For undated references, the latest edition applies to this
Standard.

3 Terms and definitions
The following terms and definitions are applicable to this Standard.
3.1
malting barley
2-row barley and multi-row barley, suitable for malting and beer brewing, which have
been approved by certain procedures.
3.2
2-row barley
The ears of 2-row barley are flat, with only two symmetrical rows of kernels along the
spike-stalk.
3.3
multi-row barley
4-row and 6-row barley are collectively called multi-row barley.
3.3.1
4-row barley
4-row barley has two pairs of interlaced kernels, and the cross-section of the ear is
quadrangular.
4 Product classification
According to the ear shape, it is divided into 2-row barley and multi-row barley (i.e., 4-
row barley and 6-row barley).
5 Requirements
5.1 Sensory requirements
Sensory requirements shall be in accordance with Table 1.
5.2 Physical and chemical requirements
5.2.1 2-row barley
5.2.2 Multi-row barley
Multi-row barley shall meet the requirements in Table 3.
5.3 Hygienic requirements
Follow GB 2715 and related standards.
6 Analysis method
The water used in this method shall meet the requirements of GB/T 6682 unless other
requirements are specified. The reagents used refer to analytical reagent (AR) unless
other specifications are specified. The prepared “solution” refers to an aqueous solution
unless otherwise specified.
6.1 Appearance
Observe the color of barley in a place with bright natural light; hold the barley sample
in hand for 5 minutes; smell its odor; observe the color; record whether there are luster,
spotted kernels (specified by quarantine objects), moldy kernels, musty smell or other
odors, etc.
6.3 Damage rate
Weigh 200 g of the sample (accurate to 0.1 g); sort out broken grains and half-grains;
weigh the mass on a balance (sensitivity 0.1 g); calculate its percentage.
Express results obtained to one decimal place.
6.4 Water content
6.4.4 Result calculation
Calculate the water content of the sample according to Formula (1), and express the
value in %.
6.5 Thousand kernels weight
6.5.1 Apparatus
6.5.2 Analysis steps
Randomly count 1 000 barley grains directly from the barley samples from which
foreign materials have been picked out, and weigh the mass on the balance. Do at least
two parallel tests.
6.5.3 Result calculation
Calculate the thousand kernels weight according to Formula (2), and express the value
in grams.
6.6 3-day and 5-day germination rates
6.6.1 Petri dish method
6.6.1.1 Apparatus
6.6.1.2 Analysis steps
Put two medium-speed filter papers with a diameter of 9 cm into the bottom of the petri
dish; add 4 mL of water to evenly wet the filter papers. Take 100 samples and put them
on the filter paper, so that the abdomen of each kernel is in good contact with the filter
paper; cover the petri dish; seal it with a film to prevent water from evaporating, or put
the petri dish into a constant temperature and humidity incubator. At a temperature of
18 °C ~ 20 °C, germinate in a dark place.
6.7 Protein
6.7.1 Principle
Under the action of a catalyst, use sulfuric acid to decompose the sample, so that the
nitrogen in the organic compound is converted into ammonia, and the distilled ammonia
is absorbed by the boric acid solution; determine the nitrogen content by the acid-base
titration method.
6.7.2 Reagents and solutions
6.7.2.7 Bromocresol green indicator solution (1 g/L). prepared according to GB/T 603.
6.7.2.8 Methyl red indicator solution (1g/L). prepared according to GB/T 603.
6.7.2.9 Bromocresol green mixed indicator solution. Pipette bromocresol green ethanol
solution and methyl red ethanol solution in a ratio of 10+4, and mix them evenly.
6.7.3 Apparatus
6.7.4 Analysis steps
Use the complete set of instruments for sample determination according to the
instruction manual. Operate the self-assembled instrument as follows.
6.7.4.1 Preparation of fine-powder test pieces
Same as 6.4.3.1.
6.7.4.4 Sample titration
Use hydrochloric acid standard titration solution to titrate the distillate, and the color
changes from green to gray, which is the end point. Record the number of milliliters of
hydrochloric acid standard titration solution consumed.
Carry out a blank test at the same time as above.
6.7.5 Result calculation
Calculate the protein of the test pieces according to Formula (7), and express the value
in %.
6.8 Plump grains and thin grains
6.8.1 Principle
The barley sample is sieved by kernel size in a vibrating three-layer sieve deck with
different hole sizes.
6.8.2 Apparatus
6.8.2.1 Balance. sensitivity 0.1 g.
6.8.2.2 Separator. Driven by the motor through the crankshaft, it is equipped with 3
layers of sieve plates with a vertical distance of 12 mm ~ 25 mm, and has a cover and
a chassis. The total height of the whole machine is 80 mm ~ 100 mm.
6.8.3 Analysis steps
Weigh 100 g (accurate to 0.1 g) of the test pieces; put them into the upper layer of the
separator; cover it; turn on the motor; oscillate accurately for 5 minutes. Weigh the
kernels above 2.5 mm and express it as a percentage.
7 Inspection rules
7.1 Batch
Products of the same place of origin, same variety, same harvest time, same grade, same
goods allocation, and same vehicle and vessel (cabin) are considered as one batch.
7.2 Sampling size
7.2.2 After taking the specimens according to Table 4, take 500 g of samples from each
specimen; mix all the samples taken evenly; divide them into two parts by diagonal
quartering; seal one part for future reference, and use the other part for sensory and
physical and chemical analysis.
7.3 Acceptance inspection
7.3.1 During acceptance, the corresponding quality inspection department is
7.4 Determination rules
7.4.1 Take specimens according to Table 4, and check the packaging and net content
first. Where the inspection result reaches the rejection number, judge the whole batch
of products as unqualified.
7.4.2 Among the physical and chemical indicators, water content and 5-day germination
rate are the main indicators of the quality grade. When other indicators are of the same
grade, but one of the indicators of water content or 5-day germination rate is not of this
grade, the grade of this indicator shall prevail.
8 Marking, packaging, transportation and storage
8.1 Marking
8.1.1 When the malting barley is transported to the grain depot or a specified place, the
place of origin, variety name, harvest time, purchase date, category and grade shall be
marked.
8.2 Packaging
8.2.1 No matter which kind of packaging is used; different varieties and different origins
must not be mixed into the warehouse.
8.2.2 Malting barley can be packed in bulk and put into silos or grain stacks.
8.2.3 Malting barley can also be packed in sacks or woven bags for storage.
8.3 Transportation
When transporting malting barley, the carriages or other means of transport shall be
kept clean, dry and free from foreign odors and pollutants.
