This standard was drafted in accordance with the rules given in GB/T 1.1-2009. This standard replaces GB/T 5513-2008 "Measurement of reducing sugars and non-reducing sugars in grain and oil." 1 Scope

This standard specifies the terms and definitions for the determination of reducing sugars and non-reducing sugars in food, as well as the methods of potassium ferricyanide and Ferien reagents. 3 Terms and definitions

4.1 Principle The reducing sugar reduces potassium ferricyanide to potassium ferrocyanide in an alkaline solution and is itself oxidized to the corresponding sugar acid.
