Foreword
This standard replaces GB 5009.43-2016 "National Food Safety Standard Determination of Sodium Glutamate (Sodium Glutamate) in Monosodium Glutamate".
Compared with GB 5009.43-2016, the main changes in this standard are as follows.

Determination of sodium glutamate in MSG
1 Scope
This standard specifies the determination method of sodium glutamate in MSG.
This standard is applicable to the determination of sodium glutamate in MSG.
Method 1.Titration of non-aqueous solutions of perchloric acid
2 Principles
The alkalinity of sodium glutamate is significantly enhanced in acetic acid solution. Use perchloric acid standard solution to titrate sodium glutamate in the sample and use potentiometric titration.
When measured by the method, the titration end point is determined based on the potential jump; when measured by the chemical indicator method, α-naphthol phenylmethanol is used as the indicator.
Titrate the sample solution to light green as the end point, and calculate the content of sodium glutamate in MSG by consuming the perchloric acid standard titration solution.
3 Reagents and materials
Unless otherwise stated, the reagents used in this method are of analytical grade and the water is secondary water specified in GB/T 6682.
3.1 Reagents
3.1.1 Formic acid (CH2O2) ≥99%.
3.1.2 Acetic acid (C2H4O2) ≥99%.
3.1.3 Perchloric acid (HClO4).
3.1.4 α-Naphthol phenylmethanol (C27H18O2).
3.2 Reagent preparation
α-Naphtholphenylmethanol-acetic acid indicator solution (2g/L). Weigh 0.1g α-naphtholphenylmethanol, dissolve it with acetic acid and dilute to 50mL, avoid

3.3 Standard solution
Perchloric acid standard titration solution [c(HClO4)=0.1mol/L]. Prepare and calibrate according to GB/T 601 or purchase standard titration with certificate
solution.
4 Instruments and equipment
4.1 Potentiometric titrator (accuracy ≤0.2mV), equipped with dynamic titration mode or isovolume titration mode.
4.2 Non-aqueous pH electrode uses Ag/AgCl as the internal reference electrode; the internal reference electrolyte is 2mol/L lithium chloride ethanol solution or
0.4mol/L tetraethylammonium bromide ethylene glycol solution.
