Foreword

This Standard replaces GB 2762-2022 National Food Safety Standard - Maximum Levels of Contaminants in Foods, includes Amendment 1. Compared with GB 2762-2022, the major changes of this Standard are as follows. -- Modify the principles of application; -- Modify the maximum levels of lead in dried meat products; -- Modify the maximum levels of cadmium in dried meat products; -- Modify the maximum levels of arsenic in dried meat products; -- Modify the maximum levels of chromium in dried meat products; -- Modify the maximum levels of nitrite in packaged drinking water (excluding drinking natural mineral water); -- Add the maximum levels of nitrite in edible bird's nest; -- Modify the description of the indicators in Table 10; -- Modify Appendix A. National food safety standard - Maximum levels of contaminants in foods

1 Scope

This Standard specifies the maximum levels of lead, cadmium, mercury, arsenic, tin, nickel, chromium, nitrite, nitrate, benzo[a]pyrene, N-dimethylnitrosamine, polychlorinated biphenyls, and 3-chloro-1,2-propanediol in foods.

2 Terms and definitions

2.1 Contaminants Unintentionally added hazardous chemical substances that are generated or introduced by environmental pollution during the production (including crop cultivation, animal husbandry and veterinary drug use), processing, packaging, storage, transportation, sales and consumption of foods. The contaminants specified in this Standard refer to contaminants other than pesticide residues, veterinary drug residues, biotoxins, and radioactive substances. 2.2 Edible portion The edible portion of food raw materials obtained after removing non-edible parts through mechanical means (such as grain milling, fruit peeling, nut shelling, meat deboning, fish deboning, shelling, etc.). 2.3 Maximum levels The maximum permissible level of contaminants in food ingredients and/or the edible portion of finished food products.

3 Principles of application

3.1 Regardless of whether the maximum levels of contaminants are set, food producers and processors shall take control measures to minimize the levels of contaminants in foods. 3.2 This Standard lists contaminants that may pose a significant risk to public health. The foods for which the maximum levels are set are those that have a significant impact on consumers' dietary exposure. 3.3 The description of food category (name) (see Appendix A) is used to define the scope of application of the maximum levels of contaminants and applies only to this Standard. When the maximum levels of a certain contaminant is applied to a certain food category (name), it applies to all food categories within that food category (name), unless otherwise specified. 3.4 The maximum levels of contaminants in foods are calculated based on the normally edible portion of the food, unless otherwise specified. 3.5 For dried aquatic products and dried edible fungi, where the indicators of maximum levels apply to both fresh food and the corresponding products, the maximum levels of contaminants in dried products shall be calculated by combining the maximum levels of contaminants in the corresponding fresh food with its dehydration rate or concentration rate. If the content of contaminants in dried products is lower than the requirements for maximum levels of contaminants in their fresh raw materials, then they can be deemed to meet the requirements for maximum levels. Dehydration rate or concentration rate can be determined through food analysis, information provided by the producer, and other available data. Unless otherwise specified.
