1 Scope
This document describes the method for determining the saponification value of animal and vegetable fats and oils. The saponification value is a measure of the free fatty acids and glycerides in oils or fatty acids.

3 Terms and Definitions
The following terms and definitions apply to this document.

Saponification value

The number of milligrams of potassium hydroxide required to saponify 1 g of oil.
4 Principles
The test sample is saponified by using an excess of potassium hydroxide and ethanol solution under reflux boiling conditions, and then titrated with a standard hydrochloric acid solution.

Unless otherwise stated, all reagents used in this document were of analytical grade, and the water used was distilled water or demineralized water of equivalent purity.
