Determination of anisidine value in animal and vegetable fats and oils
1 Scope
This document describes the method for the determination of the anisidine value of animal and vegetable fats and oils.
This document is applicable to the determination of aldehydes (mainly α, β-unsaturated aldehydes) in animal and vegetable oils and fats.
This document does not apply to milk fat and milk fat products.

Unless otherwise specified, all reagents used in this document are of analytical grade. Water should meet the requirements of Grade 3 water in ISO 3696.
5.1 Anhydrous sodium sulfate (Na2SO4).
5.2 Isooctane (2,2,4-trimethylpentane). In the wavelength range of 300 nm to 380 nm, the absorbance measured with water as reference shall not exceed

5.3 p-anisidine (4-anisole). anhydrous, milky white crystals.
