This Standard corresponds to standard Codex Stan 289-1995 (Revision 2003, Amendment 2006)" Standard for Whey Powders" issued by International Codex Alimentarius Commission (CAC). The consistent degree between this Standard and Codex Stan 289-1995 (Revision 2003, Amendment 2006) is not equivalent. This Standard replaces GB 11674-2005 "Hygienic Standard of Whey Powders". Compared with GB 11674-2005, the main changes of this Standard are as follows. - The standard name was changed to "Whey Powder and Whey Protein Powder"; - The description of "Scope" was modified; - "Terms and Definitions" was defined; - The product category in "Physical and Chemical Indices" was changed to demineralized whey powder, non-demineralized whey powder and whey protein powder; - The lactose index was added; - The fat index was deleted; - The acidity (measured by lactic acid) index was deleted; - The iron (Fe) index was deleted; - "Pollutant limit" directly quotes the provisions specified in GB 2762; - "Mycotoxin limit" directly quotes the provisions specified in GB 2761; - The "veterinary drug residues" index was deleted; - The expression method of "microorganism index" was modified; - The requirements on nutritional supplements were added. This Standard is applicable to products such as demineralized whey powder, non-demineralized whey powder, condensed whey protein powder, and separated whey protein powder.2 Normative References

3.1 Whey It refers to the liquid that is obtained by separating the clotted milk, with raw milk as the raw material, when producing cheese, casein and other similar products by adopting methods such as rennin, acidation or membrane filtration. 3.2 Whey powder It refers to the powder products that are produced by drying the raw material (whey). 3.3 Whey Protein powder It refers to the powder products of which the protein content is not less than 25 %, with whey as the raw material, produced by adopting techniques such as separation, concentration, and drying.4 Technical Requirements
4.1 Raw material requirements 4.2 Sensory requirements. It shall comply with the provisions in Table 1. 4.3 Physiochemical Indexes. It shall comply with the provisions in Table 2. 4.4 Pollutant limit. It shall comply with the provisions of GB 2762. 4.5 Mycotoxin limit.
