of Standardization on Frozen Drinks (SAC/TC 497).

Frozen drinks – Ice cream
1 Scope
This Standard specifies ice cream’s terms and definitions, product
classifications, raw and auxiliary materials, technical requirements, production
process control, inspection methods, inspection rules, label, packaging,
transport, storage, sales and recall requirements.
This Standard is applicable to production, inspection and sales of pre-packaged
ice cream; it is not applicable to soft ice cream products that are made on-site
and sales.
2 Normative references
The following referenced documents are indispensable for the application of

5 Raw materials
5.1 Drinking water
It shall comply with the provisions of GB 5749.
5.2 White sugar
It shall comply with the provisions of GB 317.
5.3 Dairy product
It shall comply with the provisions of relevant national standards or industrial
standards.
5.4 Egg product
It shall comply with the provisions of GB 2749.
5.5 Edible vegetable oil
It shall comply with the provisions of GB 2716.
5.6 Other raw materials
The scope of use and application amount shall respectively comply with the
provisions of GB 2760 and GB 14880.
5.7 Food additive and food enrichment
The quality shall comply with the provisions of relevant national standards or
industrial standards.
It shall comply with the provisions in Measures for the Examination of
Measurement Standards.
6.5 Food additive and food enrichment
It shall respectively comply with the provisions in GB 2760 and GB 14880.
7 Production process control
It shall comply with the provisions in GB 14880.
8 Inspection methods
8.1 Sensory requirements
In the frozen state, take a single packaged sample. Place it in a clean and dry
white porcelain plate. Examine the packaging quality first, then peel the
package. Visually inspect the color, the shape, the structure and the impurities.
Taste and smell the taste and the odor.
8.2 Negative deviation of net weight
It shall conduct according to the provisions in JJF 1070.
8.3 Total solid, fat and protein
The determination shall be conducted according to the methods stipulated in
SB/T 10009.
8.4 Health indicators
The determination shall be conducted according to the methods stipulated in
GB 2759.1.
9 Inspection rules
9.1 Batch
Products of same-shift, same-type and same-specifications shall be deemed
as the same batch.
9.2 Sampling method and amount
In finished products, randomly and uniformly extract 1/2000 in batch. The
extraction of each batch shall not be less than 2 kg.
9.5.2.2 When 3 and more items (except microbiological indicators prescribed in
health indicators) of type inspection items fail to comply with the provisions in
this Standard, it shall double the sample for re-inspection. If one item still fails
in re-inspection, then this batch of product shall be determined as unqualified.
When more than 3 items of type inspection items fail to comply with the
provisions in this Standard, then this batch of product shall be determined as
unqualified. It shall not conduct re-inspection.
9.5.2.3 If 1 item of microbiological indicators prescribed in health indicators fails
to comply with the provisions in this Standard, then this batch of product shall
be determined as unqualified. It shall not conduct re-inspection.
10 Label
10.1 The label of pre-packaged product shall comply with the provisions in GB
7718. The classification shall be indicated.
10.2 It shall be labeled as “×× fruit flavor ice cream” when mass fraction of
original fruit juice content in ice cream is less than 2.5%. It shall be labeled as
“×× fruit juice ice cream” when mass fraction of original fruit juice content is ≥
2.5%. It shall be labeled as “×× fruit ice cream” when it has fruit pulp or fruit
pieces.
11 Packaging
11.1 Packaging material shall comply with the provisions in relevant national
standards or industrial standards.
11.2 Single package shall be complete, tightly sealed and without damage.
11.3 The packaging box shall be firm, clean, complete, without damage, and
clean in appearance. It shall be in conformity with the packed items. Outer of
the box shall be sealed.
12 Transport
12.1 Transport vehicles shall meet health requirements. Short-distance
transport shall use refrigerated trucks while the temperature of long-distance
transport refrigerated compartment shall be < -15°C.
12.2 The products shall not be packaged or transported with toxic or
contaminated items. Prevent extrusion.
12.3 The products shall be handled with care. Throwing, hitting or squeezing
