Foreword
This standard is a revision of SB/T 10282-1997 "Meat Dry."
The main changes in this standard compared with SB/T 10282-1997 are as follows.
---In the physical and chemical indicators, the chloride of beef jerky and dried pork is changed from ≤7% to ≤5g/100g; the protein of beef jerky is changed from ≥40%
Is ≥34g/100g; pork dry protein is changed from ≥36% to ≥28g/100g;
--- In the microbiological index, the total number of bacteria in beef jerky and dried pork is changed from ≤30000/g to ≤10000 CFU/g; coliforms
Changed from ≤40/100g to ≤30MPN/100g;
--- Increased the definition of meat and dried meat and its physical and chemical indicators;
--- Delete the sensory test score method for the dried meat products in Appendix A (indicative appendix) of the original standard.
