1 Scope
This standard specifies the HPLC method for the determination of pyruvic aldehyde in honey.

3 Principle
After the honey sample is dissolved in water, it is derivatized with o-phenylenediamine, and determined by high performance liquid chromatography, and quantified by an external standard method.
4 reagents and materials
The experimental water should meet the requirements of the first-grade water in GB/T 6682.
4.1 Acetonitrile. C2H3N, chromatographically pure.
4.2 Formic acid. CH2O2, chromatographically pure.
4.3 Pyruvic aldehyde standard. C3H4O2, 40g/100g aqueous solution (CAS. 78-98-8).
4.4 o-phenylenediamine. C6H8N2, analytically pure.
4.5 0.1% formic acid aqueous solution. Measure 1 mL of formic acid (4.2) in a 1 L volumetric flask, dissolve in water and dilute to volume, and make 0.1%.
Aqueous formic acid.
4.6 Derivatization reagent. Weigh 0.6 g of o-phenylenediamine (4.4) (accurate to 0.01 g) in a 100 mL volumetric flask, dissolve in water and bring to volume
