11 General Provisions
1.0.1 This code is formulated with view to improving pollution control level, meeting the safety and
hygiene requirement of foods production and reasonably applying air cleaning technology.
1.0.2 This code is applicable to the design, construction, project test and acceptance of cleanroom in
newly-built, reconstructed and expanded plants for food processing and production.
1.0.3 The cleanroom buildings in food industry shall comply with not only this code but also the
requirements of relevant current national standards.
2 Terms
2.0.1 Food
Finished product and raw material for the eating and drinking of human as well as the goods
double as food and drug traditionally except for those for the purpose of treatment.
2.0.2 Food industry
A continuous and organized economic activity industrial system manufacturing, extracting and
processing the products or semi-finished products in agriculture, fishery, animal husbandry, forestry or
chemical industry into foods or semi-finished products.
2.0.3 Cleanroom
The room controlling the concentration of airborne particulates, which is also called as cleanroom.
The cleanroom is constructed and used to reduce the introduction, generation and detention of
particles in room. The relevant indoor parameter such as temperature, humidity and pressure shall be
controlled as required.
2.0.4 Good hygiene practice (GHP)
For the process control system of food hazard, the production environment meeting the food
hygiene conditions and created through hazard analysis, pollution control and key point control during
the whole food production process.
2.0.5 Critical control zone
A zone in the cleanroom during food processing procedure; if this region is not controlled properly,
it much more likely to cause danger, such as finished product contamination.
2.0.6 Background zone
The area beside the critical control zone in the same cleanroom.
2.0.7 Food contact surfaces
The surfaces contacting the food and those which frequently drip wastewater on foods or on the
surface contacting foods during processing, including the surfaces of instruments and equipment
contacting foods.
2.0.8 Room for cleaning human body
The room in which the staff cleans him- or herself according to certain procedures before entering
into the clean zone.
2.0.9 Room for cleaning material
The room in which the material is cleaned according to certain procedures before entering into
the clean zone.
2.0.10 Particle concentration
The quantity of suspended particles in unit volume of air.
2.0.11 Microorganisms concentration
3 Plant Plane Layout
3.1 General Requirements
3.1.1 The plan, design, layout, construction, expansion and renovation of food plant with cleanroom
shall meet the food hygiene production requirements and shall be protected from contamination, cross
contamination and mixing.
3.1.2 The production environment in the plant area shall be clean; the road surface and transport
shall not cause contamination to the food production process.
3.2 General Layout
3.2.1 The position of buildings in the food plant area built with cleanroom shall meet the requirements
of food production process; the air cleaning production area and ordinary production area shall be
clearly distinguished in the production area.
3.2.2 The buildings generating serious air pollution during the production process shall be built at
the windward side of perennial minimum frequency wind direction in the plant area.
3.2.3 Production processes causing mutual adverse effect should not be set in the same building;
where they are set in the same building, the respective production areas shall be separated.
3.2.4 The ordinary production area shall include warehouse space...
