National food safety standard - Drinks
1 Scope
This standard applies to drinks. It is not applicable to packaged drinking water
(including drinking natural mineral water).
2 Terms and definitions
2.1 Drinks
The product -- which uses one or more edible raw materials; is added or not added with
auxiliary materials, food additives, food nutrition fortifiers; is processed into
quantitative packaging for direct drinking or reconstituted drinking; has the ethanol
content of not more than 0.5% by mass. It is also known as beverages, such as
carbonated beverages, fruit and vegetable juices and their beverages, protein beverages,
solid beverages, etc.
3 Technical requirements
3.1 Requirements for raw and auxiliary materials
The raw and auxiliary materials shall comply with the corresponding food standards
and relevant provisions.
3.2 Sensory requirements
Sensory requirements shall meet the requirements of Table 1.

Liquid drinks: Take about 50 mL of the well-mixed sample to be tested. Put
it in a colorless and transparent container. Observe the color under natural
light. Identify the odor. Use warm water to rinse mouth. Taste the taste. Check
whether there is any foreign matter. The drink concentrate shall be tested, after
being diluted, according to the preparation method, which is indicated on the
product label.
Solid drinks: Take about 5 g of the tested sample. Place it in a clean white
porcelain plate. Observe its color and appearance under natural light. Prepare
the sample according to the preparation method, which is indicated on the
label. Pour it into a colorless and transparent container. Observe the color and

Foreword
This Standard replaces GB 2759.2-2003 Hygienic STANDARD for
carbonated drinks, GB 7101-2003 Hygienic standard for Mai Ru Jing (Solid
beverage containing milk), GB 11673-2003 Hygienic STANDARD for milk
beverage, GB 16321-2003 Hygienic STANDARD for lactobacillus beverage,
GB 16322-2003 Hygienic STANDARD for vegetable protein beverage, GB
19296-2003 Hygienic STANDARD for tea drinks, GB 19297-2003 Hygienic
STANDARD for fruit and vegetable juice, GB 19642-2005 Hygienic standard
for cocoa powder based solid drink.
Compared with the standards being substituted, the main modifications in this
Standard are as follows.
- modified the name of standard to “National standard on food safety -
Beverage”;
- modified physical and chemical indicators;
- modified microbiological indicators.
National standard on food safety - Beverage
1 Scope
This Standard is applicable to beverage.
This Standard is not applicable to packaged drinking water.
2 Terms and definitions
2.1 Beverage
Drink
The product that is quantitatively packaged, for direct drinking or drinking with
water, of which the ethanol content does not exceed the mass fraction of
0.5%.
3 Technical requirements
3.1 Requirements for raw material
The raw materials should comply with the corresponding food standards and
relevant regulations.
3.2 Sensory requirements
The sensory requirements should comply with the provisions of Table 1.

Foreword
Full text of this Standard is mandatory.
This Standard replaces GB 7101-1994 Hygienic standard of solid drink.
Compared with GB 7101-1994, main changes of this Standard are as follows.
— Change the standard format according to GB/T 1.1-2000;
— Change the structural and definitions of this Standard; add the raw material, food
additives, hygienic requirements for manufacturing and processing, packaging,
label, storage and transportation;
— Change the application scope and definitions according to GB 10789-1996;
— Delete the category of baking type (instant coffee) and corresponding requirements.
From the implementation date of this Standard, GB 7101-1994 shall be abolished.
This Standard was proposed and shall be under the jurisdiction of the Ministry of Health
(MOH) of the People's Republic of China.

Hygienic standard for solid drink
1 Scope
This Standard specifies solid drink’s terms and definitions, indicators requirements, food
additives, hygienic requirements for manufacturing and processing, packaging, marking,
storage, transportation and testing methods.
This Standard is applicable to solid drink manufactured by raw materials such as fruit juice,
plant and animal protein and plant extract, etc. of which the moisture does not exceed
5.0g/100g.
This Standard is not applicable to solid drink manufactured by cocoa as raw material
without baking.
2 Normative References

when they are quoted herein. For the dated documents so quoted, all the modifications
(excluding corrections) or revisions made thereafter shall not be applicable to this
Standard. For the undated documents so quoted, the latest editions shall be applicable to

3 Terms and definitions
For the purpose of this Standard, following terms and definitions apply.

Attachment 1. Corrigendum
GB7101-2003 "Hygienic standard for solid drink" - No. 1 Amendments
This amendment was approved by the National Standardization Committee on
January 17, 2008 through “National-Standard-Commission Agricultural-letter
[2008] No. 10“. It shall be implemented from the data of approval.
The changes of GB7101-2003 "Hygienic standard for solid drink" are as
follows.
1. Delete the indicator 4.3 "copper" in physiochemical indicators;
2. Delete the clause "10.2.5 copper" in 10.2 physiochemical indicators.
