The larger the hardness index, the higher the wheat hardness; and vice versa, the lower the wheat hardness. 4 Classification 4.1 Durum white wheat Wheat with a white or yellow-white seed coat of at least 90% of the kernels AND a hardness index of no less than 60. 4.2 Soft white wheat Wheat with a white or yellow-white seed coat of at least 90% of the kernels AND a hardness index of no more than 45. 4.3 Durum red wheat Wheat with a dark-red or reddish-brown seed coat of at least 90% of the kernels AND a hardness index of no less than 60. 4.4 Soft red wheat Wheat with a dark-red or reddish-brown seed coat of at least 90% of the kernels AND a hardness index of no more than 45. 4.5 Mixed wheat Wheat that does not comply with the provisions of 4.1 to 4.4. ......
