Protease K activity unit proteaseKactivityunit
At 55 ℃, pH8.0, 1min hydrolysis of casein to produce 1μgL-tyrosine as an enzyme activity unit.

4 principle
Protease K is a cleavable serine protease that catalyzes the hydrolysis of alpha-casein containing more serine sites.
In this method, α-casein is used as the reaction substrate, and hydrolyzed to L-tyrosine by protease K, and the absorbance value is measured at 275 nm. again
The linear regression equation was obtained by measuring the absorbance values of L-tyrosine standard solution at 275nm, and the standard curve was constructed.
