This Standard replaces and abolishes GB 18356-2001 “Moutai liquor (Kweichow Moutai liquor)”. As compared with GB 18356-2001, the main amendments of this Standard are as follows. - According to the “Regulations on the Protection of Product of Geographical Indication” promulgated by General Administration of Quality Supervision, Inspection and Quarantine of the PRC, MODIFY relevant names; - Changed from mandatory to recommended; - MODIFY the texts of some definitions, raw material requirements, brewing environment, traditional techniques, etc., to make them more accurate and clearer; - According to current national standards, MODIFY the alcohol content of physical and chemical indexes; - ADD the product specification with a volume of more than 1 L. Appendix A of this Standard is a normative appendix. This Standard was proposed by and shall be under the jurisdiction of National Working Group on Products of Origin or Geographical Indications of Standardization Administration of China. Product of geographical indication - Kweichow Moutai liquor 1 Scope This Standard specifies the scope of protection, terms and definitions, requirements, test methods, inspection rules, marking, packaging, transportation, and storage of product of geographical indication of Kweichow Moutai liquor. This Standard is applicable to Kweichow Moutai liquor approved by the competent administrative department of quality supervision, inspection and quarantine of the PRC according to the “Regulations on the Protection of Product of Geographical Indication”. 2 Referenced standards The clauses in the following documents, by reference in this Standard, constitute the clauses of this Standard. For the dated references, the subsequent amendments (not including errata content) or revisions do not apply to this Standard. However, parties which have reached an agreement according to this Standard are encouraged to study whether the latest edition of these documents can be used. GB 1351 Wheat GB 2757 National Food Safety Standard - Distilled Spirits and Formulated Spirits GB/T 5009.48 Method for analysis of hygienic standard of distilled wines and mixed wines GB 5749 Standards for drinking water quality GB 7718 National Food Safety Standard - Standard for nutrition labelling of prepackaged foods GB/T 8231 Sorghum GB 10344 General standard for the labeling of prepackaged alcoholic beverage GB/T 10345 Method of analysis for Chinese spirits GB/T 10346 General principle of inspection for Chinese spirits GB/T 15109 Terminology of Chinese spirits industry 3 Scope of protection of product of geographical indication The scope of protection of Kweichow Moutai liquor is limited to the scope approved by the competent administrative department of quality supervision, inspection and quarantine of the PRC according to the “Regulations on the Protection of Product of Geographical Indication”, SEE Appendix A. 4 Terms and definitions The terms and definitions defined in GB/T 15109 and the following are applicable to this Standard. 4.1 Kweichow Moutai liquor The liquor which is made from high-quality sorghum, wheat, and water, and is produced according to the traditional techniques of Kweichow Moutai liquor in the specific geographical area of Maotai Town, Renhuai City, Guizhou Province. 4.2 Storage time of liquor The time for which the liquor produced is stored and ages in the pottery jar, in years. 4.3 Aged Kweichow Moutai liquor Kweichow Moutai liquor with a storage time of not less than 15 years and blended. 4.4 Sorghum A Chinese nick-name for sorghum when feeding for Kweichow Moutai liquor. The production feeding is divided into two stages. sorghum charging and sorghum making. 4.5 Batch The production process in which the fermented grains are steam-boiled, spread for cooling, mixed, stacked for fermenting, put into sand-gravel cellar for fermenting, and distilled. 4.6 The three high-temperature processes and three long-term processes “Three high-temperature processes” refer to high temperature starter-making, high temperature stacking fermentation, and high temperature flowing liquor. “Three long-term processes” mean that Daqu is stored for not less than six months; the raw materials are fermented in multiple batches; the production cycle is one year; and the base liquor is stored for not less than three years. 4.7 Blending The technique process in which the finished product is prepared by combing base liquors of different typical base liquors, different batches, different alcohol contents, and different storage times in a certain proportion, without adding any foreign matters. 4.8 Typical base liquor The sensory characteristics of base liquor of Kweichow Moutai liquor are three kinds of flavors. sauce, cellar bottom, and alcohol sweet. 5 Requirements 5.1 Raw material requirements 5.1.1 Sorghum 5.1.1.1 Origin It is mainly produced in Renhuai City, Guizhou Province. A few are produced in areas adjacent to Renhuai City. 5.1.1.2 Technical index It shall meet the requirements of GB/T 8231. The sorghum variety shall be glutinous sorghum. 5.1.2 Wheat It shall meet the requirements of GB 1351. 5.1.3 Water Water shall be taken from Chishui River and shall comply with the provisions of GB 5749. 5.1.4 Daqu for Kweichow Moutai liquor Daqu is made of high-quality wheat as raw material, produced according to traditional techniques, with a storage period of not less than six months. 5.2 Brewing environment It shall meet the geographical scope defined by the Regulations on the Protection of Product of Geographical Indication. The area is located in the north of Guizhou, close to the east side of Chishui River. It is located in the middle reaches of Chishui River, with an altitude of 420 m~600 m. Surrounded by mountains, it is a relatively closed river valley. The regional climate is short in summer and long in winter. The annual temperature is high. The air humidity is high. The frost and snow are rare. The annual average temperature is about 18°C; the minimum temperature is about 3°C; and the highest temperature is about 40°C. The annual average relative humidity is about 78%. The annual average wind speed is about 1.2 m/s. The unique ecological environment for brewing Kweichow Moutai liquor is formed. 5.3 Traditional techniques The traditional production technique of Kweichow Moutai liquor has the following characteristics. seasonal production, the three high-temperature processes and three long-term processes. Twice feedings; nine times of steaming-boiling (distilling); eight times of spreading for cooling and adding Qu, stacking for fermenting, putting into sand-gravel cellar for fermenting; seven times of taking liquor. The production cycle of liquor is one year. The batch liquor is divided into three typical base liquors and stored in the pottery jar for not less than three years, carefully blended, and packaged for leaving the factory. It is no less than five years from the material feeding to the product out of the factory. 5.4 Sensory requirements Sensory requirements are shown in Table 1. Table 2 -- Physical and chemical indexes 5.6 Hygienic indexes It shall be in accordance with the provisions of GB 2757. 6 Test methods It shall be in accordance with the provisions of GB/T 10345 and GB/T 5009.48. 7 Inspection rules It shall be in accordance with the provisions of GB/T 10346. 8 Product specifications Product specifications are shown in Table 3. Table 3 -- Product specifications 9 Marking, packaging, transportation, storage 9.1 Marking Product labelling shall meet the requirements of GB 10344 and GB 7718. 9.2 Packaging, storage, transportation It shall be implemented in accordance with the provisions of GB 10346. The alcohol content of “aged Kweichow Moutai liquor” in the standard is modified as follows. 1. The item of “53%vol aged Kweichow Moutai liquor” in Table 1 of the standard is modified to “Aged Kweichow Moutai liquor”. 2. The item of “53%vol aged Kweichow Moutai liquor” in Table 2 of the standard is modified to “Aged Kweichow Moutai liquor”. It is divided into two parts. The alcohol content (20 °C)/(%vol) of “80-year” aged Kweichow Moutai liquor is separately labeled as “52.0”. No.2 amendment of GB/T 18356-2007 “Product of geographical indication - Kweichow Moutai liquor” This amendment was approved by the Standardization Administration of the PRC on May 8, 2015 and was implemented on May 30, 2015.
