Foreword

This standard replaces GB 1886.40-2015 "National Food Safety Standard for Food Additives L-Malic Acid". Compared with GB 1886.40-2015, the main changes in this standard are as follows. ---The scope has been changed; ---Added physicochemical indicators. moisture and succinic acid; ---The descriptions of physicochemical indicators, total arsenic content, and total arsenic limits have been revised, and heavy metals have been removed; ---The testing methods for identification, content, clarity, fumaric acid, maleic acid, lead, and total arsenic have been revised; ---A test method for succinic acid has been added; ---Appendices A and B have been revised, and Appendix C has been added. National Food Safety Standards L-malic acid, a food additive 1.Scope This standard applies to L-malic acid, a food additive produced by enzyme engineering from fumaric acid or fumarate; or from starch. L-malic acid is a food additive produced by fermentation using sugars as raw materials. 2.Chemical name, molecular formula, structural formula, and relative molecular mass 2.1 Chemical Name L-hydroxysuccinic acid 2.2 Molecular Formula C4H6O5 2.3 Structural Formula 2.4 Relative Molecular Mass 134.09 (based on 2022 international relative atomic mass)

3 Technical Requirements

3.1 Sensory Requirements Sensory requirements shall comply with the provisions of Table 1.
