This Standard is applicable to the determination of saccharose in foods. 2 Normative References The provisions in following documents become the provisions of this Standard through reference in this Standard. GB/T 5009.7-2003 Determination of Reducing Sugar in Foods 3 Principle After removing the protein, the saccharose in the sample is hydrolyzed and converted into reducing sugar, then it shall be determined as per the reducing sugar. The difference of reducing sugar before and after the hydrolysis is the saccharose content. 4 Reagents 4.1 Hydrochloric acid (1+1): take 50mL of hydrochloric acid; dilute by water to 100mL. 4.2 Sodium hydroxide solution (200g/L). 4.3 Methyl red indicator solution: take 0.10g of methyl red; dissolve by a small amount of ethanol; and then dilute to 100mL. 4.4 The other reagents shall be the same as that in Clause 3 of GB/T 5009.7-2003. ......
